Setting Realistic Goals


Setting healthy eating goals at the beginning of the year can be a bit stressful. We often set goals and they are out of the door by end of the month. A few years ago, I decided to make a lifestyle change that included giving up cake. Needless to say, that did not work for me, simply because I love cake and all things food!

Realistic goals are easier to maintain and they are sustainable. I started with small changes such as only eating one slice of bread with my sandwich or when shopping parking my car far away from the door so that I will walk more.

I also keep a food diary, work out consistently, meditate, and I eat what I want to in moderation. Strict dieting is difficult for me but maintaining a healthy lifestyle with no judgement zones has been great for me. I have been able to maintain my weight while being happy with my lifestyle choices. I hope that my story helps you with your goals.

This month I am sharing one of my most popular lentil soup recipes with you. It is pretty healthy, filling, and tasty too! Enjoy!

Latrell’s Tasty Lentil Soup

Ingredients

  • 1 onion, finely diced

  • 4 tablespoons of olive oil

  • 2 carrots, diced

  • 2 stalks celery, diced

  • 1 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 2 cups dry lentils

  • 8 cups water

  • salt to taste

  • ground black pepper to taste

Directions

  1. In a large soup pot, heat oil over medium heat. Add onions, carrots, and celery; cook and stir until onion is tender. Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes.

  2. Stir in lentils, and add water and tomatoes. Bring to a boil. Reduce heat, and cook until tender. (30-45 min) Serve with green onions and diced tomatoes on top.
