Latrell's Easy Salmon Croquettes


 

Have you ever wondered what you should do with that can of salmon in your pantry? Growing up, we had salmon croquettes regularly. Here is my take on this southern classic. What do you like to eat with your salmon croquettes? I'm a country girl and I like mine with a little hot sauce and grits!

Ingredients

1 14.75 oz can of salmon (skin and bones removed)-reserve liquid

½ cup of finely diced onion

½ cup of finely diced bell pepper

1 egg-beaten

½ tsp of red pepper flakes

½ tsp of parsley

¼ cup of flour

4 cups of oil to deep fry

Instructions

Place salmon and the rest of the ingredients in a large bowl. Mix well. Use two spoons or a small scoop to create salmon balls. (You may also make patties.) Place in to pan of oil (heated to 375 degrees) without over-crowding. Cook until golden brown. Remove from oil. Drain on paper towels. Let cool. Serve immediately. Serves 6
