Crawfish or Shrimp Beignets
Serves 4-6
Ingredients
1 cup all-purpose flour
1 tsp baking powder 1 cup water
2 tsp chopped garlic ½ cup chopped pimento
3 green onions-chopped ½ tsp hot sauce
¼ tsp of salt 8 oz cooked crawfish tails
Directions:
In a large combine all ingredients in the order listed—except
the oil and lemon wedges. Cover the bowl and let stand for
20 minutes. Preheat the oil to 360 degrees. Drop batter by
the spoonful into the oil and fry until golden brown. Serve
hot.
Latrell’s Creole Tartar Sauce
Ingredients
1 cup mayonnaise
1 tablespoon Dijon mustard
1 garlic clove, minced
2 tablespoons parsley, finely chopped
3 tablespoons green onions, finely chopped
1⁄2 tablespoon Cajun seasoning
Directions
Combine all ingredients…serve with fried fish or crawfish beignets…enjoy!
