Latrell's Easy & Tasty Stir Fry

Preparing healthy meals for your family can be time consuming, but it does not have to be. Simple meals can be tasty too! I love making my own Asian inspired meals. Here is my take on stir fried chicken served over your choice of white or brown rice.


Latrell’s Easy Chicken and Veggie Stir Fry

1 lb chicken breast cut into 1 inch cubes


  • 2 tbsp vegetable oil divided

  • 2 cups broccoli florets

  • 1/2 yellow bell pepper cut into strips

  • ½ small onion finely sliced and cut into strips

  • 1/2 red bell pepper cut into strips

  • 1/2 cup baby carrots sliced

  • 1 tsp minced ginger

  • 1 garlic clove minced

Stir Fry Sauce

  • 1 tbsp corn starch

  • 2 tbsp cold water

  • 1/4 cup water

  • 4 tbsp low sodium soy sauce

  • 1/4 cup honey

  • 1 tbsp toasted vegetable oil

  • 1/2 tsp crushed red pepper flakes (optional)

Instructions


Stir Fry Sauce

1. In a medium size bowl, whisk together corn starch and water. Add remaining ingredients

(water, soy sauce, honey, oil, and red pepper flakes optional) and stir with a whisk until smooth. Set aside.

2. Add one tablespoon of oil to a large skillet over medium high heat.

3. Add chicken and season with salt and pepper. Cook for 5 minutes or until cooked through. Remove from skillet.

4. Reduce heat to medium and add remaining tablespoon of oil to the skillet.

5. Add broccoli, bell pepper, and carrots and cook, stirring occasionally, just until crisp tender. Add

ginger and garlic and cook for an additional minute.

6. Add chicken back into the skillet and stir to combine.

7. Whisk stir fry sauce and pour over chicken and vegetables and stir gently to combine.

8. Cook on medium heat, stirring occasionally for 3-4 minutes. Remove from heat. Serve chicken

and veggie mixture over white or brown rice. Enjoy!
