Summertime brings an abundance of vegetables including squash and zucchini. Check out my version of a recipe developed by my late friend CH. She loved mine as much as I loved hers. Enjoy!
Ingredients
Serves 4-6
· 2 medium yellow squash, chopped
· 2 medium zucchini, chopped
· 1 lb of ground turkey
· 14.5 oz can petite diced tomatoes
· ½ cup diced green peppers
· ½ cup diced onions
· Salt and pepper to taste
· ½ tsp dried basil
· ½ tsp dried parsley
· 2 tsp of olive oil
Directions
Add olive oil and ground turkey to a large frying pan. Cook until browned thoroughly. Optional: (Drain excess liquid)
Add chopped squash, zucchini, and green pepper. Cover and cook on medium heat for four minutes.
Add tomatoes, basil, salt, pepper, and parsley. Cook until vegetables are tender. Serve immediately.
Can be served alone or over rice or pasta.
