Turkey, Squash, and Zucchini Surprise

Summertime brings an abundance of vegetables including squash and zucchini. Check out my version of a recipe developed by my late friend CH. She loved mine as much as I loved hers. Enjoy!

Ingredients

Serves 4-6


· 2 medium yellow squash, chopped

· 2 medium zucchini, chopped

· 1 lb of ground turkey

· 14.5 oz can petite diced tomatoes

· ½ cup diced green peppers

· ½ cup diced onions

· Salt and pepper to taste

· ½ tsp dried basil

· ½ tsp dried parsley

· 2 tsp of olive oil


Directions

Add olive oil and ground turkey to a large frying pan. Cook until browned thoroughly. Optional: (Drain excess liquid)

  • Add chopped squash, zucchini, and green pepper. Cover and cook on medium heat for four minutes.

  • Add tomatoes, basil, salt, pepper, and parsley. Cook until vegetables are tender. Serve immediately.

  • Can be served alone or over rice or pasta.
