Latrell's Spicy Haitian Piklez!
Ingredients
2 cups shredded cabbage
1 large carrot
1 cup thinly sliced bell pepper (green, orange, red)
1 cup thinly sliced onion
2 thinly sliced scallions
1 scotch bonnet pepper--optional
2 cloves garlic
2 teaspoons salt--to taste
2 cups vinegar
Juice of ½ lime
Directions
Place all ingredients in a glass or plastic container. Fill the container with enough vinegar to cover the ingredients in the storage container. Allow to marinate for at least 2 days before use.
Note: Red pepper flakes can be used instead of the scotch bonnet pepper.
